Group Cooking March 31st

We're going to try another Wed., March 31st as I have a Bible study on Thursdays, now. Same time (1pm) and same place (Evergreen). I'll need people to do a job like last time - bringing a snack, picking up a few ingredients, coming early, staying to clean up, etc.

Needed Pans:
1 - 9x13 - for Enchilada Pie
Recomended:
1 - loaf pan (like for bread) or an 8x8 for Salmon Loaf
1 - container for Porcupine Meatballs so you can make them into meatballs at Group Cooking
Recipes for # 1-5 can be found in earlier posts. #6-8 are new and the recipes follow. Meals for this time:

#6 Recipe: Same BBQ recipe as Chicken BBQ used before just with 5#'s of chicken drumsticks instead - baked in the oven


#7 Chicken Stir-fry (for some reason I couldn't paste into the blog so I'm going to do a condensed version. I can e-mail the full recipe if you ask.)

2 pounds Chicken breasts, lemon juice, garlic, ginger, br. sugar, red pepper flakes, soy sauce, rice vinegar, chicken broth, green onions, carrots, red bell pepper, broccoli, cornstarch: combine in different bags (chicken, sauce, veggies) and freeze. Thaw and saute different ingredients for different times and then combine all in the end. Not an overpowering Asian sauce but very flavorful.

#8 Salmon Loaf

24 ounces salmon, butter crackers, eggs, milk, lemon juice, salt, onion powder: combine and put into a loaf pan and freeze. Thaw and bake at 350 for 45 minutes. This recipe goes back to my grandparent's generation!
